Southwest Chilekeas

I put together this little offering after hearing some ladies in the breakroom talking about some of their favorites. I have to say this is definitely one of my tastiest offerings to date

1. need to have 3 chicken breasts at least.
2. 1/2 pkg of white corn tortillas
3. cilantro fresh
4. green onions
5. garlic powder
6. 1 small can of diced jalapenos chiles-macayos brand
7. 1 medium can of green enchilada sauce-macayos brand
8. salt & pepper
9. soy sauce
10. fresh garlic cloves
11.  bag of colby jack & monteray  cheese blend
12. bag of Mozerella cheese
13. 1/2 bag of brown rice
14. 1 /3  cup of lime juice
15. oregano seasoning
16. a little vegetable oil
17. rice cooker and frying pan

I usually start by dicing up my green onions and garlic cloves and I simply tear off about a small handful
of cilantro and putting it into my rice cookers bottom pot , and of course we are going to fill the pot with water so that we can put in the 3 chicken breasts to boil on high.
Once the chicken is boiling we can turn down the heat to medium and let it cook til done.  Add some garlic powder to the boiling chicken and also open up the can of diced jalapeno’s and add this to the boiling chicken as well.  As this cooks you will smell the wonderful aroma.
Now here is the other part, when I was creating this recipe I noticed that when the chicken was done cooking I had this awesome broth left over and I hated to see it thrown away and wasted.
So hence we are also making some Jalapeno , chicken , brown rice soup.  LOL, so while the chicken is cooking you will want to put on some brown rice to cook in another pot.  Once the chicken is done cooking you want to take the chicken out of the pot and pour the broth , into the already cooked rice pot.   Next we’re going to add some oregano seasoning, lime juice, soy sauce, and mix it up good.
In addition take one already cooked chicken breast , slice and dice it to bite size chunks and also add it to the soup mix.  It already is plenty flavorful so season to your own taste buds.

So now we have to finish the next part .  Take 1/2 of the white corn tortillas out of the bag and  slice them into 8 slices like you would a pie only smaller, so folks like to just tear the tortillas up into a frying pan, I like mine cut.  Make sure  to  a little oil in the frying pan to cook the tortillas, and cook means to heat em up until their soft and heated.  Careful not to burn em.

Next you want to add your enchilada sauce to the cooking tortillas in the frying pan.  Mix and keep stirring, this and than cut up your other 2 chicken breasts  that you had previously cooked up.  Insure that you  cut the chicken up into bit size pieces before adding it to the enchilada & tortilla mix.
Keep on mixing and stirring as well, and now we will add the colby jack & monterey  cheese blend, sprinkle large handfuls.  Keep mixing it up good, and than when it gets to a nice consistency , which I will leave up to you to decide LOL, we will than cover the top with a nice layer of Mozerella cheese, the kind that  comes in the bags already grated.

Now heat the oven to 400 degrees and place the frying pan in the oven for roughly 8 minutes or just long enough to melt the layer of cheese on top of the chilekeas.

Now to polish off the meal just right be sure to get some sour cream and add it to your portion when you serve it , you can’t go wrong with this.
p.s.  you can’t resist having a bowl of the jalapeno soup before hand , they go together well.
